This is a very collectible and rare set of Cassoulet dishes by 'Moulin des Loups', France. The six smaller dishes have illustrations of three classic Cassoulet recipes for 'Cassoulet de Toulouse, Cassoulet de Carcassonne' and 'Cassoulet de Castelnaudary.'
The set consists of:
Six round deep sided dishes with three different Cassoulet recipe designs (three 'Toulouse', two 'Castelnaudary' and one 'Carcassonne') measuring 20cms/ 8" diameter and a matching 'Les Cassoulets' serving bowl measuring 28cms/ 11" diameter. The serving bowl carries the 'MOULIN DES LOUPS 'ORCHIES' NORD' France (Mill of wolves in English) mark on the underside.
Altogether they weigh 3.2kgs / 7lbs.
Cassoulet is a rich, slow-cooked casserole containing meat (typically pork sausages, goose, duck and sometimes mutton), pork skin (couennes) and white beans (haricots blancs), originating in southern France. The traditional homeland of Cassoulet is the region once known as the province of Languedoc, especially the towns of Toulouse, Carcassonne, and Castelnaudary, which is said to be where the dish originated.
All Cassoulets are made with white beans (haricots blancs or lingots), duck or goose confit, sausages, and additional meat. In the Cassoulet of Toulouse, the meats are pork and mutton, the latter frequently a cold roast shoulder. The Carcassonne version is similar but doubles the portion of mutton and sometimes replaces the duck with partridge. The Cassoulet of Castelnaudary uses a duck confit instead of mutton.

They are in amazing condition, there are no chips or cracks, one of the dishes has a slight scratch on the motif and there are some microscopic edge 'nibbles' (see last photo), these are not noticeable at normal viewing distance, and are to be expected with the age of this set, they do not in any way detract from the beauty or functionality of these classic 1970's bowls.
