These French oyster knives have two essential things : a built-in guard in stainless steel, real protection for your hands, and a sharp edge. The handles are made of solid hardwoods.
To use them correctly:
Wrap a tea towel over one hand and use it to hold the oyster firmly.
Using the oyster shucking knife in the other hand, place the tip of the shucking knife at the base of the hinge, twist the knife using pressure, then without the pressure, lever the knife upwards, or twist it to prise the hinge open.
Slide the knife under the top shell to release the oyster and remove the shell.
You can now add a dressing of your choice to the oyster.
They are all slightly different from each other and vary in size, the largest measures 15cms/6" long, the smallest 13.5cms/5¼". The widest guard measures 7cms/2¾", the smallest 5cms/2".
Some of the handles are more rounded then others and the guards are all different shapes and sizes, making them exciting to the eye. Interesting, individual utensils. They are all marked 'Inox/Acier (Stainless Steel) France', two are branded 'Trempe'.
They are all in genuine, vintage condition, as you can see from the photos. They have opened many oysters, over the years, so some of the guards are loose and there are signs of corrosion but they are all still perfectly usable and the 'wear' actually gives them an authenticity and charm.
